Crazy for Lemon

I've had this craving for anything lemon lately....and no, I'm not pregnant!
Just to set things straight :)

Anyways, I ate something at a fair here in Brazil and I loved it. Hubby took me back there again and we could not find the people who sold this again, (sadness)....
so I decided to try to make it on my own....and boy, am I pleased with the turnout!?!?!

It was super easy to make and it tastes yummy... it's kind of like a tart thingy... ummmmmmm

 Yummy Lemon Tart

Bottom crust:

2 cups all purpose flour

3 Tablespoons of Sugar

3/4 tsp. salt

1 cup cold butter

Directions:

In a bowl, combine the flour, sugar, and salt; cut in butter until mixture resembles coarse crumbs. Stir until dough forms a ball. Press into the bottom and sides of eight  4" tart pans.. (I did not have tart pans, so I just pressed them into muffin pans, and that worked fine. Cover and refrigerate for 20 minutes. Bake at 350 for 20-25 minutes or until golden brown. Cool on wire racks.

Filling:

1 can of sweetened condensed milk

1 cup of heavy table cream

1/2 to 3/4 cup of lemon juice (depends if you want a strong lemon flavor, or a light one)

Beat the sweetened condensed milk, heavy cream, and lemon juice in the blender for about 2 minutes or until well mixed. Let it chill for a couple of minutes in the fridge while the little crusts cool. When the crusts are cooled, spoon the lemon cream stuff on. Garnish with lemon wedges or grated lemon peel. Keep in the fridge until time to serve.

It's Monday!!!!

I can't believe it's been a week since I've posted! Wow! I really started a post many times this last week, but I never got around to getting it done...you probably know what that's like, or maybe, just maybe you don't...just take my word for it then :)

We had a good week...a very busy one, but it was good altogether! I started teaching my piano students again, so I teach 2 times a week. We had taken a break for the end of the year festivities and just now resumed back to the normal schedule. I have more people wanting lessons, English lessons, so I might be getting some more students soon...I enjoy it, but it together with all my other duties and responsibilities keep me always on the go, which is good. mind you!

In my last post, I had asked you to pray for my cousin, Kevin who was in the hospital with a bacterial infection...well, he was able to go home last Thursday and he's doing very well. He finished his antibiotics on Sunday and is doing much better! Thank-you for your prayers for him!

I also mentioned my lil' prince was sick, and he has also gotten better since my last post, so I am very thankful for that. He's back to the smiling and energetic little self, so that makes me very happy, of course!

We're having a busy year at church too, my hubby is in charge of the music this year and he also is in charge of a special family night on the second Saturday of every month, so we're excited about that and also looking for fun ideas for games and special things. We're having an ice cream social in a couple of weeks and we're in charge of that too, so needless to say, I have a lot on my plate right now, which I do enjoy, and I am thankful I am able to do all these things :)

Anndd, I also love, love, love being a mommy to the lil' one. Every phase is just so much fun, but it's been incredibly fun seeing him learn new things and do funny things and say small words! It's also so great that he can get around now...I love seeing him being able to explore the world, it does take lots of extra attention from me, but I am so happy for him!

I snapped the picture below at the mall this last week. He saw a huuuuggggeee mirror and he just loved it. He kissed and hugged himself and it was so cute :) All the people going by stopped to enjoy the scene :)

Ha ha ha ha.... This child of mine really cracks me up! He's a case and a half for sure!

On to another subject...............

I started the beginning of the week with a deep cleaning, cleaned and re-organized all the cupboards, wardrobe, went through the lil' ones clothes and put away the ones that don't fit him any more (sniff, sniff, sniff...okay, I won't got there!), washed the floors and organized Cd's and book shelf, so everything is looking great and I feel a wonderful sense of accomplishment! It was well worth the hard work! I love starting the week with organization...seems like everything runs smoother that way!

The good thing is, I get to take a nap with the lil' one this afternoon, and I hope to bake something yummy and do some reading later today ;)

Confession Monday

I have a confession to make......I an addict...whoa, there you got it! I am addicted to coke, yes....coke, but it's not just plain american coke...sorry you guys, but american cokes can't ever be compared to our wonderful Brazilian coke.  If you've never tried Brazilian coke, you just don't know what you're missing! It's awesome...and yes, I have tried American coke a million times and it just doesn't have the same taste ...I don't know why, but umm, I love coke! Glass bottle coke, mind you...tastes different too! You're talking to a coke expert here, so yeah...Man, yumminess....

Another confession, I am deeply in love with the little guy pictured below, and I just can't stop taking pictures of him...I know you all must be so tired of seeing his little face, but I never get tired of this beautiful, delicious, smiley little prince! Just melts my heart! Isn't he too cute?!?!

Yet another confession....I hate pictures of myself....I just do....I just don't like it....period.
My hubby insisted on getting a picture of me yesterday, so I let him take it, and I was going to delete it, but I think he did a pretty good job, and this picture is not the worst I have seen of me, soooo here you are!!!!

Whew! I feel better after making some confessions :) So there you are, you know some things about me now!

Mondays are usually a laid back day for us...just recuperating from busy weekends and enjoying good food, oh and coke... never.mind! I have a one track mind when it comes to coke (sigh)

Anyways, back to Monday, I cleaned the house early this morning, and am getting some laundry done and eating tacos for lunch.. i.love.mexican.food! Another one of my down falls! Yum!!!! I hope to get some reading done today during lil' prince's nap-time!
